よっちゃんのNEWバージョンです！ 今回は、マンゴーピューレと地元の柑橘ピールを用いることで、異国情緒を感じながらもローカルに楽しめる新たな組み合わせを目指しました。
これまでのものよりも、軽やかで飲みやすいカクテルのような仕上がりを求め、通常使用するオーツ麦をカットすることで、やや軽めのボディに仕上げました。酵母からの酸味とバランスをとるために乳糖を使用し、心地良い甘味を持たせています。サワーリング用の酵母からピーチのような風味も加わり、マンゴピューレとオレンジピールと組み合わさると、フルーティなサワーカクテルのようでするすると飲み進められます。是非、お楽しみ下さい！
We have a new version of Yochan available! This time we went with something exotic and something local by combining mango puree and zest from locally grown oranges.
We were looking for something a little lighter than what we have done in the past with a nice cocktail-like feel. We cut out the oats that we often use which made the beer a little lighter in body. We kept the lactose in the recipe in order to balance the tartness from the yeast so the beer has a pleasant sweetness. For souring we used a yeast because it also gives a peach flavor to the beer. Once we added the mango and zest we had a nice blend of mango, orange and peach flavor with a cocktail vibe that is really easy drinking. Hopefully you will agree!
