Saint Yoshie
We have some new versions of Saint Yoshie ready! This time we partnered with a local umeshu maker, Tokunaga Umeshu, and used plums after they had been used in their umeshu. We have done this in the past, but what makes this time really interesting is that Tokunaga makes umeshu using different liquors and matches specific plum varieties to the liquor. We were able to use plums from two different types of umeshu and see the impact.
Emitame uses plums from an umeshu made with shochu. The strong, clear ume flavor and aroma blends nicely with the spicy saison notes. There is some sweetness from the plums but the typical crispness of a saison is still apparent.
Tokami uses plums from umeshu made with brandy. This has a rich mellow flavor. The plum aroma is mixed with hints of butterscotch, vanilla and clove that complement the saison spiciness to give a deepness to the beer.
It was great working with Tokunaga and hopefully we will continue to play around with the different flavors of umeshu they have. If you are interested in their umeshu check out their website:
