We have a new pilsner ready for release! We are calling this one Chameleon Pilsner because, like Chameleon IPA which we released earlier this year, we have added Brett yeast.
Right now this is an Italian style pilsner with a wonderful hop character of herbs, citrus and berry that mixes with the bread and honey notes from the malt. For the malt and water we aimed for a softer Czech Pils style rather than a crisp German Pils because we wanted the rounder, fuller mouthfeel and slightly higher maltiiness. We feel it goes well with the higher level of hops.
The Brett yeast we chose for this beer is a slow working variety that produces citrus and white wine notes. We are holding back some of the kegs and bottles for release next year. We are hoping the Brett will work to protect the hop character while adding new flavors and extra complexity to the beer.
